Yogurt, Lemon and Mint Grilled Chicken
- 2 cups Laban or plain greek yogurt
- 1/3 cup extra virgin olive oil
- 2 Tablespoons grapeseed or vegetable oil for the grill
- 2 1/2 - 3 Tablespoons fresh lemon juice
- 6 garlic cloves mashed to a paste
- 2 Tablespoons fresh parsley finely minced plus 1 Tablespoon for garnish
- 2 Tablespoons fresh mint finely minced plus 1 Tablespoon for garnish
- 1 teaspoon salt
- 6 skinless bone in chicken breasts
- 1 cup pitted green olives for garnish optional
- 1 lemon sliced for garnish
