Ingredients

  • 1 1/4 pounds eggplant (about 1 medium), cut into 3/4-inch chunks
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 2 cloves garlic, minced
  • 1/2 cup raw walnut halves
  • 3/4 cup panko bread crumbs
  • 1/4 cup all-purpose flour
  • 3 tablespoons minced shallot
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/2 cup ricotta cheese
  • 1 (10-ounce package) frozen chopped spinach, thawed and squeezed dry
  • 1 large egg, lightly beaten
  • Marinara sauce, for serving
