Ingredients

  • 4 canned anchovy fillets (if salted rinse well, if in oil don?t rinse)
  • 3 1/2 ounces (100 ml) white wine
  • 2 1/2 pounds (1.2 kg) chicken or guinea hen, cut into 8 pieces
  • Salt and freshly ground black pepper
  • 2 garlic cloves, unpeeled and lightly crushed
  • 3 tablespoons (44ml) rendered pork fat*, or 3 tablespoons extra-virgin olive oil
  • 2 6 inch (15 cm) sprigs rosemary
  • 4 tablespoons (60ml) white wine vinegar
