  • For the Lemon Vinaigrette:
  • 1/4 cup chopped fresh Italian parsley leaves
  • 1/4 cup chopped fresh mint leaves
  • 1 medium chopped tomato
  • 1/3 cup sliced spring onions
  • 1/3 cup matchstick carrots
  • 1/3 cup chopped radish
  • 1 (15oz) can Le Sueur® Very Young Small Sweet Peas, drained
  • 1 cup tricolor quinoa
  • the zest of 1 lemon
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 3-4 tablespoons olive oil
