  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1/3 cup raw unsalted pumpkin seeds (50 g)
  • 1 cup sliced green olives (120 g)
  • 1 packed cup fresh flat-leaf parsley leaves
  • 2 clementines, segmented and cut into small chunks
  • 1 small shallot, finely chopped
