Ingredients

  • 1/2 cup filtered water
  • 3/4 cup shelled hemp seeds**
  • Green Tzatziki
  • 1 cup sesame seeds or as much as needed to coat the patties
  • Freshly ground black pepper, to taste
  • 1 1/2 teaspoons sea salt or to taste
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 1/2 to 2 teaspoons ground cumin, to taste
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons pourable tahini
  • 3 cloves garlic, peeled and roughly minced
  • 1 small red onion, peeled and roughly chopped (about 1/2 cup)
  • 1/3 cup packed flatleaf parsley, tough stems removed and chopped
  • 1/3 cup packed cilantro, tough stems removed and chopped
  • 1 cup oat flour*
  • 1 cup almond meal
  • 1 pound peeled and diced carrots (about 5 cups)
  • 1/4 cup filtered water
  • 2 tablespoons ground flaxseed
  • Sesame-Crusted Carrot Falafel
  • 1/4 cup chopped fresh chives
  • 1/4 cup stemmed cilantro leaves
  • 1/4 cup stemmed flatleaf parsley
  • 1/4 cup peeled and diced cucumber
  • 1?2 cloves garlic, peeled, to taste
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 3/4 teaspoon sea salt or to taste
  • 1/4 cup grated cucumber
