Ingredients

  • 1 teaspoon ground cumin
  • 1 garlic clove, minced
  • 1 green bell pepper, stemmed, seeded and diced
  • 1 small onion, diced
  • 1/2 pound sausage, preferably lamb merguez or breakfast sausage, casing removed
  • 2 tablespoons plus 1 tablespoon vegetable oil or peanut oil
  • 24 frozen tots
  • 1 teaspoon smoked paprika
  • 1 can (28 ounces) diced tomatoes with their juices
  • 6 large eggs
