Tropical Salmon Burgers

Fire up the grill and indulge in the tastes of the sea with tropical salmon burgers! A dynamic combination of mango, jalapeño and red bell peppers adds a flavorful kick. If desired, these tropical babies can even be served bunless to trim off those extra carbs.

Ingredients

  • 2 green onions, chopped
  • 1/2 cup red bell pepper, seeded and chopped about 1/2 of a pepper
  • 1/2 cup poblano pepper, seeded and chopped about 1 small poblano
  • 1/2 cup mango, peeled and chopped fresh is best but frozen thawed is okay
  • 1/4 teaspoon pepper
  • Tropical Salsa
  • 1/2 teaspoon salt
  • 1/3 cup panko bread crumbs
  • 1 pound salmon fillet, skin removed and minced
  • 2 tablespoons parsley or cilantro, chopped
  • 1 lime, juiced
  • 1/4 teaspoon salt
