Mediterranean Grilled Balsamic Chicken with Olive Tapenade

Here's another balsamic marinade to try the next time you blaze the grill's fire! This Mediterranean grilled balsamic chicken with olive tapenade recipe is healthy and doused in the fresh flavors of tarragon, garlic and sun dried tomatoes. You'll be shouting, "Olive you!" after the first bite.

Ingredients

  • 1 4-ounce jar green olives, drained and pitted (I use HemisFares Green Castelvetrano Olives)
  • ¼ cup capers, drained and divided
  • ½ cup sun dried tomatoes, drained and coarsely chopped (7 ounce jar)
  • ¼ cup olive oil
  • 3 cloves garlic, pressed or minced
  • Olive Tapenade
  • Serve with Olive Tapenade (recipe below) and chunks of feta cheese
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • Juice of ½ lemon
  • 1 heaping tablespoon chopped fresh herbs such as Simple Truth tarragon, rosemary or thyme
  • 3 cloves garlic, pressed or minced
  • 1½ tablespoons balsamic vinegar
  • ¼ cup golden balsamic vinegar
  • ? cup Private Selection Whole Grain Garlic Mustard
  • ¼ cup olive oil
  • 2 skinless, boneless Simple Truth chicken breasts
  • Grilled Balsamic Chicken
  • 1 6-ounce jar mixed Greek olives, drained and pitted (I use Private Selection Greek Olive Mix)
  • Juice of 1 lemon
  • 2 teaspoons balsamic vinegar
  • ½ teaspoon freshly ground black pepper
  • ? cup fresh chopped Italian parsley
