Vegan Sundried Tomato Parmesan Garlic Knots

Ingredients

  • 1 tablespoon Alessi Garlic Purée
  • 1 1/4 teaspoons sea salt, divided, plus more to taste
  • 1 teaspoon dried thyme
  • 5 tablespoons olive oil, divided, plus more for greasing and brushing
  • 1 (2?ounce) packet Alessi Sun Dried Tomatoes, finely chopped
  • 3 1/4 cups whole spelt flour, plus more as needed and for dusting
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 2 teaspoons pure maple syrup
  • 3/4 cup warm water (105?F?115?F)
  • 1 1/4 cups (212g) peeled and small-diced (1/3-inch cubes) russet potato
  • 1/4 to 1/3 cup flatleaf parsley, minced
  • 1 (1 3/4?ounce) jar Alessi Pine Nuts
  • 2 tablespoons nutritional yeast flakes
