Braised Chicken and Savory Peaches

 

Peaches take on a savory disguise in this main course! Not only will your dinner look beautiful upon presentation, but each bite of this Southern delicacy will blow your mind with the notes of peach, rosemary, garlic, tarragon, and prosciutto. There is a lot packed into this dish therefore a lot to experience with every bite.

Ingredients

  • 3 cloves garlic thinly sliced
  • 1 - 2 medium leeks white and light green parts only, thinly sliced (about 1 cup)
  • Kosher salt and freshly ground black pepper
  • 3 lbs bone-in, skin-on chicken thighs about 6 to 8
  • 1 oz thinly sliced prosciutto cut crosswise into thin strips
  • FOR THE BRAISING
  • 1 tbsp extra-virgin olive oil plus a little more, as needed
  • Pinch granulated sugar
  • Pinch Kosher salt
  • 2 tbsp sherry vinegar
  • 1 1/2 tbsp fresh rosemary finely chopped
  • 2 1/2 tbsp spiced dark run optional, but adds a lot of flavor
  • 1/3 cup extra-virgin olive oil
  • 3 medium-ripe peaches pitted and sliced, diced, or cut into wedges (we like wedges)
  • FOR THE PEACH MARINADE
  • 2 tbsp all-purpose flour
  • 3 cups of the marinated peaches drained, with marinade reserved
  • 3 cups chicken stock
  • 2 tbsp capers drained
  • 2 tbsp unsalted butter
  • 2 tbsp fresh tarragon leaves coarsely chopped
