Poke Bowls with Sesame Soy Almonds

This recipe will poke your tastebuds awake with its combination of soy sauce, rice, fish, avocado, and other delectable vegetables. Every bite will taste sea fresh!

Ingredients

  • 1 Tablespoon gluten-free Tamari or soy sauce (dish will not be GF if using traditional soy sauce)
  • 1 Tablespoon sesame oil
  • For the Sesame-Soy almonds:
  • 1/2 serrano pepper (or more or less,) thinly sliced
  • heaping 1/4 teaspoon freshly grated ginger 
  • 1 small clove garlic, microplaned or grated
  • 1lb sushi-grade fish (I used 1/2lb each salmon and tuna,) cut into bite-sized pieces
  • 2 green onions, sliced on the diagonal, divided
  • 1 avocado, chopped
  • 1/2 sheet nori, thinly sliced
  • For the sushi rice:
  • 1 cup sushi rice
  • 2 teaspoons sugar
  • 1-1/2 Tablespoons rice vinegar
  • For the pickled vegetables:
  • pinch of salt
  • 3 Tablespoons rice vinegar
  • scant 1 Tablespoon sugar
  • pinch of salt
  • 1 large carrot, peeled then julienned
  • 1/3 English cucumber, julienned
  • 1/2 serrano pepper (or more or less,) thinly sliced
  • For the sauce:
  • 1/4 cup gluten-free Tamari or soy sauce (dish will not be GF if using traditional soy sauce)
  • 2 teaspoons sesame oil
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon mirin
  • 1/3 cup Fisher Naturals sliced almonds
