Detox Berry Quinoa Spinach Salad with Sweet Shallot Vinaigrette

If your system needs some clarifying then try this quinoa spinach salad! Package this salad to bring to lunch at work or eat the salad alongside a bigger entrée at dinner. It's full of berries, almonds, quinoa, spinach, and crumbly goat cheese, all topped with a shallot vinaigrette.

Ingredients

  • 1 cup of raw pecans
  • pint of strawberries, hulled and quartered
  • DRESSING:
  • 1/4 cup of shallots, diced
  • 1 teaspoon of olive oil
  • 1 teaspoon of dry basil
  • 1 tablespoon of honey
  • 1/4 cup of red wine vinegar
  • 1/2 cup of olive oil
  • SALAD INGREDIENTS:
  • salt & pepper
  • 1 cup of cooked quinoa
  • 10 oz. of baby spinach
  • 4 oz. of crumbled goat cheese
  • pint of blackberries
