Ingredients

  • Snipped chives for garnish
  • Microgreens for garnish
  • 1 avocado, cut in half and seeded
  • ¼ cup shelled pistachios or pistachio meat
  • 2-3 cups canola oil
  • 1 egg
  • ½ cup bread crumbs
  • ½ cup all-purpose flour
  • Pinch of salt
  • 6 ounces goat cheese, at room temperature
  • Kosher salt and freshly ground black pepper
  • 1 teaspoon sugar
  • 2 tablespoons white balsamic vinegar
  • ½ cup extra virgin olive oil
  • ? large shallot, peeled and sliced thin
  • 8-10 beets, I used a mix of red beets, yellow beets and chiogga beets
