One-Pot Mexican Shrimp with Orzo and Zucchini

You'll find this Mexican dish completely fulfilling and easy with its notes of tomatoes, green chilies, cinnamon, and cilantro and it's easy one-pot recipe design. Ingredients

  • Juice of 2 limes
  • ¼ cup chopped cilantro
  • ½ teaspoon ground cinnamon
  • 1 10-ounce can diced tomatoes with green chilies and chipotle peppers (I used RO*TEL)
  • 1 cup water
  • 2 cups chicken broth
  • 1 ? cup dry orzo pasta
  • ? cup minced shallots
  • 1 tablespoon canola oil
  • 4 cloves garlic, pressed or minced, divided
  • 1 tablespoon butter
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • 1 pound medium shrimp that have been shelled and deveined
  • 2 cups sliced zucchini
