  • 2 tablespoons vegetable oil
  • Generous pinch salt
  • 1 tablespoon light brown sugar
  • 2 tablespoons wine vinegar (red, white, or sherry)
  • 2 tablespoons balsamic vinegar
  • For the grilled cheese sandwiches
  • 4 slices white bread
  • Unsalted butter, at room temperature
  • 5 to 5 1/2 ounces sharp Cheddar, thinly sliced
