Turkey Meatball Soup

Ingredients

  • 1 small yellow onion, chopped
  • 2 tablespoons olive oil
  • 4 cups cold water
  • 1 cup (7 to 8 ounces) farro, preferably pearled or quick-cooking
  • For the soup
  • Freshly ground black pepper
  • 1/2 teaspoon salt, or to taste
  • Finely grated zest of 1/2 to 1 small lemon, preferably organic
  • 2 tablespoons fresh flat-leaf parsley, finely chopped
  • 1 large egg, lightly beaten
  • 3 tablespoons freshly grated Parmesan cheese
  • 6 tablespoons (1/2 ounce) panko bread crumbs
  • 1 pound (500 grams) ground turkey (preferably a mix of white and dark meat)
  • Olive oil, for the baking sheet
  • For the turkey meatballs
  • 3 cloves garlic, finely chopped
  • 6 cups (48 ounces) homemade chicken stock or canned chicken broth
  • Sea salt and freshly ground black pepper
  • 4 to 6 ounces regular spinach leaves or baby spinach leaves
