Ingredients

  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios
  • 9oz baby spinach
  • 4 eggs
  • salt and pepper
  • extra virgin olive oil
  • 2 chicken breasts (12-14oz,) pounded to an even thickness
  • 2 Tablespoons honey
  • 2 teaspoons extra virgin olive oil
  • 15oz can garbanzo beans (also called chickpeas)
  • salt and pepper
  • 1 garlic clove, microplaned or minced
  • 4oz chevre (goat cheese)
  • For the Lemon-Honey Vinaigrette:
  • Juice of 2 lemons
  • 6 Tablespoons extra virgin olive oil
