Basil-Cilantro Pesto and Grilled Pineapple Skewers

Combine some grains and pesto with a burst of that grilled pineapple flavor for this awesome treat. It's easy to make, and takes less than a half hour to cook!

Ingredients

  • 2 cloves garlic, roughly chopped
  • ½ cup packed fresh basil
  • ½ cup packed fresh cilantro (or more basil)
  • ? cup raw pepitas (green pumpkin seeds)
  • Basil-Cilantro Pesto:
  • Optional but recommended: ½ cup crumbled feta cheese, for garnishing (omit for vegan/dairy free meal)
  • Salt and freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 1 small red onion, both ends chopped off and then sliced into wedges no wider than the bell pepper pieces
  • 1 medium red bell pepper, seeded and sliced into about 1-inch square pieces
  • 2 cups cubed fresh pineapple (about 1 small pineapple, sliced into 1-inch chunks)
  • 1¼ cups freekeh
  • Freekeh and skewers:
  • 2 tablespoons fresh lime juice (about 1 medium lime, juiced)
  • ½ teaspoon fine-grain sea salt
  • ? cup extra virgin olive oil
