Healthy One Pot Mexican Quinoa Casserole

Ingredients

  • 2 tablespoons olive oil
  • 2 boneless chicken breasts, cut into ½" cubes
  • 1 cup diced red onion
  • 2 garlic cloves, minced
  • 6 mini assorted color sweet red peppers, sliced
  • 2 (4 oz.) cans diced green chilis
  • 14 oz can low sodium pinto beans, rinsed and drained
  • 1 cup diced roma tomatoes
  • 1 cup quinoa
  • 2 cups low sodium chicken broth
  • 2 teaspoons cumin
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • ¼ cup fresh cilantro, chopped
  • ½ cup shredded colby cheese
  • 1 avocado, diced
  • ¼ cup diced green onions
