Ingredients

  • 1 lb dried bucatni, or linguine, cooked al dente (about 7 - 8 minutes in salted boiling water)
  • 2 tablespoons extra-virgin olive oil
  • 1½ lb large shrimp, peeled and deveined, shells reserved
  • 3 tablespoons olive oil
  • Kosher salt
  • 1 28 oz can whole tomatoes
  • 1 cup dry white wine
  • 1 teaspoon red pepper flakes
  • 6 garlic cloves, mince
  • ½ teaspoon dried oregano
  • ¼ cup fresh basil, chopped
  • 2 anchovy fillets, minced
  • ¼ cup fresh parsley, chopped
  • 1½ teaspoons jarred pepperonchini, chopped, plus 1 teaspoon of the juice from the jar
