Ingredients

  • 1 3-1/2 lb boneless center-cut pork loin roast (ask your butcher to cut you one if you don't see it in the meat section of your supermarket)
  • 2 tablespoons light brown sugar
  • Kosher salt and freshly ground black pepper
  • Good quality olive oil (you'll need a total of 6 tablespoons)
  • 8 garlic cloves (3 sliced, 5 left whole)
  • 1 cup Parmesan cheese, grated
  • ¾ cup fresh flat-leaf parsley, chopped
  • ½ cup fresh basil, chopped
  • ¼ cup capers
  • 3 anchovy fillets, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 shallots, peeled and halved
  • 2 sprigs fresh rosemary
  • 1½ tablespoons all-purpose flour
  • ¼ cup dry white wine
  • 2 cups chicken stock
  • ¼ cup heavy cream
