Ingredients

  • 1 cup uncooked wild rice (this will make 3 cups once cooked)
  • 5 cups stock, 4 cups for cooking rice, 1 cup for casserole (See Note)
  • ½ lb fresh kale
  • 1 medium yellow onion, chopped
  • 4 teaspoon olive oil
  • 1 tablespoon fresh thyme, chopped
  • ½ teaspoon ground nutmeg
  • 4 tablespoons all-purpose flour
  • 1 cup milk
  • ½ cup sun-dried tomatoes (in oil), chopped
  • 1 cup Fontina cheese, shredded, and divided in ½ cups
  • Kosher salt and fresh ground black pepper, to taste
  • Olive oil, or vegetable, cooking spray
  • ½ cup almond slivers
