Ingredients

  • 2 tablespoons olive oil
  • 12 ounces mixed mushrooms (chanterelle, oyster, cremini, shiitake, etc), cleaned and thinly sliced
  • 2 cups baby spinach
  • 1 garlic clove, minced
  • Salt and pepper
  • 8 eggs
  • ¾ cup heavy cream
  • 1½ teaspoons chopped fresh parsley
  • 1½ teaspoons chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme leaves
  • 4 ounces crumbled goat cheese
  • ¼ cup grated parmesan cheese
