Seared Ahi Tuna Lettuce Cups

These seared ahi tuna wraps are easier to make then you think! Prepare these as an appetizer for your next cocktail party, or serve them for dinner.

Ingredients

  • 2 tablespoons brown rice vinegar
  • ¼ cup water
  • Salt and black pepper
  • Butter lettuce
  • 3 tablespoon olive oil divided
  • 1 tablespoon brown sugar
  • ½ cup toasted sesame seeds
  • ½ cup chopped salted cashew nuts
  • 1 tablespoon orange juice
  • 1 tablespoon water
  • 2 garlic cloves minced
  • ½ cup soy sauce
  • ½ tablespoon cornstarch
  • Half a pound of sashimi grade ahi tuna
  • 1 carrot cut into thin strips
  • 1 piece of daikon radish, about 4 inches long cut into thin strips
  • 2 green onions thinly sliced
  • 3 cups brown rice cooked and cooled
