  • ½ cup finely diced shallot
  • 6 tablespoons olive oil divided
  • 4-5 cups chicken stock
  • Juice of 1 large lemon or 2 small lemons
  • 2 garlic cloves minced
  • 1 pound large uncooked shrimp deveined with no shells or tails
  • Zest from two lemons
  • Fresh Parmesan Cheese
  • Fresh chopped rosemary
