Ingredients

  • Lemon wedges and chopped parsley for garnishing
  • 1-2 tablespoons flour
  • 1 pound firm white fish
  • 1 pound large raw shrimp, peeled
  • 1 ½ ponds little neck clams or mussels
  • 1 large fennel bulb, thinly sliced
  • 6 cloves garlic, sliced
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • ½ teaspoon crushed red pepper
  • 1 tablespoon dried tarragon (2 tablespoon fresh tarragon)
  • 4-5 sprigs of fresh thyme
  • 3 tablespoons tomato paste
  • 2 teaspoons salt
  • 1 ½ cups wine
  • 1 bay leaf
  • 1 large pinch of saffron
  • 28 ounce can diced tomatoes
  • 32 ounce carton seafood stock
