Ingredients

  • 1 cup pitted and packed soft + sticky medjool dates (about 12 dates)
  • 1 ½ cups unsweetened plant-based milk
  • 1 pound fresh strawberries, hulled (about 2 ½ to 3 cups hulled)
  • Strawberry Ice Cream:
  • 1 cup raw cashews, soaked in hot water for 1 to 2 hours (until plump and soft enough to blend), drained
  • 1 teaspoon arrowroot starch
  • 2 tablespoons pure maple syrup
  • Berry Swirl:
  • 2/3 cup unsweetened raw cashew butter
  • 12 ounces frozen mixed berries (about 2 ½ cups)
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon fine-grain sea salt
  • 2 tablespoon pure maple syrup
