Ingredients

  • For the Blueberry Compote:
  • ½ C. fresh squeezed lemon juice
  • ¾ C. Fresh or frozen blueberries
  • 1 tbs maple syrup
  • 2 tsp water
  • 1 tsp lemon zest
  • ½ tsp corn starch
  • For the Pastry:
  • Two disks all buttermilk pie dough
  • 1 egg
  • ¼ tsp cinnamon
  • 1 ½ tbs cane sugar
  • For the Curd:
  • ¾ C. Organic can sugar
  • zest of 2 lemons
  • 2 large organic eggs
  • ½ C. unsalted butter
