Ginger Miso Soba Noodle bowls with Wakame

Ingredients

  • Lime
  • Thai Basil
  • Cilantro
  • For Garnish:
  • Sesame Seeds
  • 1 bundle (76g) Soba Noodles
  • 2 green onions, sliced thin on the bias
  • 4 C Water
  • 1 Tbs Sesame Oil
  • 1 ½ tsp Fresh Ginger, finely minced
  • 3 Tbs White Miso Paste
  • 1 tsp fresh garlic, finely minced
  • 1 Tbs Wakame
  • 1 Tbs Tamari
  • 1 tsp Sriracha
  • 2 C Fresh cremini or Shiitake mushrooms, stemmed and quartered
  • 2 small bok choy, chopped thin, greens and whites separated
  • 2 medium carrots, julienne
  • 1 C sugar or snow peas, sliced thin on the bias
  • Sriracha
