Ingredients

  • Tomato Soup:
  • 2 tablespoons softened butter
  • 1 small yellow onion, diced
  • 1 23 ounce can diced tomatoes (do not drain)
  • ½ teaspoon salt
  • 1 ¼ cups vegetable or chicken stock
  • 1 32 ounce can crushed tomatoes
  • ¾ cup half & half or heavy cream
  • ¼ teaspoon pepper
  • 4-5 medium to large basil leaves, chopped
  • 2 tablespoons olive oil
  • Grated cheddar cheese
  • 1 tablespoon sugar
  • White bread, sliced
  • Homemade or Store bought basil pesto
  • Pesto Grilled Cheese:
  • 3 garlic cloves (about 3 teaspoons), minced
