  • 2 large egg whites
  • 1 large egg
  • 1 cup ice water
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup vegetable shortening
  • 1 ½ cups granulated sugar
  • ¼ teaspoon baking soda
  • ½ cup all-purpose flour
  • 1 ¼ teaspoons baking powder
  • 6 tablespoons butter, softened
  • 2 cups cake flour
  • Cupcakes:
  • 1 ½ cups granulated sugar
  • 1/3 cup all-purpose flour
  • 1 ½ cups milk
  • 1 ½ cups (12 oz.) unsalted butter, soft but cool, cut into pieces
  • Coconut Frosting:
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ cup of the coconut pastry cream
  • 1 teaspoon vanilla extract
  • ½ cup shredded sweetened coconut, toasted
