Mediterranean Spaghetti Squash

Have fun with everyone's favorite fall vegetable this season. This healthy alternative to spaghetti cuts the calories in half but tastes just as great! Pair with a glass of wine if desired.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • ¾ cup crumbled feta cheese
  • Salt and pepper
  • 2½ cups halved grape tomatoes
  • ½ cup sliced black olives
  • 3 tablespoons chopped fresh basil
  • 1 3-4 pound spaghetti squash, halved lengthwise and seeded
