Roasted potatoes are the prefect warm side to just about anything. These fluffy wedges are tinged just right with lemon and pair perfectly with a garlic aioli.

Ingredients

  • 5 Russet Potatoes, cut in wedges
  • ¾ Cup Water, Broth or Stock
  • Zest of 1 Lemon
  • Juice of 1 Lemon (see note)
  • ¼ Cup Olive Oil
  • 3 Cloves Garlic, minced
  • 1½ Tablespoons Sea Salt or Kosher salt
  • 2 Teaspoons Fresh Oregano
