Easy Shrimp Pad Thai

You don't need to stop by a restaurant for a delicious pad thai. whip up this amazing dish from home - it's quick, easy, and makes fro great left-overs as well!

Ingredients

  • 10 oz. Thai rice noodles (linguine width)
  • 2 teaspoons tamarind paste
  • 3 tablespoons fish sauce
  • 3 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 1 teaspoon dark brown sugar or palm sugar
  • 4 tablespoons canola oil, for stir frying
  • 3 garlic cloves, minced
  • 1 - 2 red chilies, seeds removed and minced
  • 1 lb large shrimp, cleaned (shells removed and deveined)
  • 3 tablespoons chicken stock
  • 2 eggs
  • 2 cups bean sprouts
  • ½ cup roasted peanuts, roughly ground, for garnish
  • ¼ cup cilantro, chopped, for garnish
  • ¼ cup red pepper flakes, for garnish
  • 1 lime, cut into wedges, for garnish
