1 - 8 oz package shitake mushrooms
1 red onion, peeled, cut in half and thinly sliced
1 Tbsp. olive oil
2 tsp. sherry wine vinegar
4 La Brea Bakery Talera rolls, lightly toasted
1 cup fresh arugula leaves
1/2 cup mayonnaise
2 Tbsp. whole grain dijon mustard
1/2 - 1 tsp. chopped chipotle chiles in adobo
2 Tbsp. white wine vinegar
