Ingredients

  • ¾ cup all-purpose flour
  • ½ cup white whole wheat flour (or whole wheat pastry flour)
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • 2 large eggs
  • 2 large egg yolks
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup melted coconut oil
  • 1 teaspoon vanilla
  • ¾ cup cooked, pureed sweet potato
  • ½ cup buttermilk
  • For the brown sugar frosting:
  • ½ cup unsalted butter
  • 1 cup packed dark brown sugar
  • ¼ cup milk
  • 2 cups powdered sugar, sifted
  • For the glazed pecans:
  • ¼ cup granulated sugar
  • 1 cup pecan halves
  • 1 heavy pinch cinnamon
