Quinoa Carrot Cake Muffins

These carrot cake muffins are the way to go this week for breakfast. They're sweet and spicy without being too sweet making them a great way to kickstart your day.

Ingredients

  • 2 ripe bananas, mashed
  • 4 tbsp maple syrup
  • 1 large free-range egg
  • ½ cup vegetable oil, plus extra for greasing
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • 2 cups cooked quinoa (made from ¾ cup uncooked)
  • 1 medium carrot, peeled and grated (makes ½ cup grated)
