Ingredients

  • 1/2 tbsp extra virgin olive oil
  • 1 6oz box of baby spinach or baby kale
  • 2 15oz cans of chickpeas
  • 1 red onion, diced
  • 2 yellow bell peppers, diced
  • 2 sweet potatoes, diced into 1/4 inch cubes
  • 1/2 cup frozen corn
  • 1 large carrot, peeled and diced
  • 5 celery sticks, diced
  • 7 cloves of minced garlic
  • 1 tbsp minced ginger
  • 2 heaping tbsp Curry Powder
  • 1 tsp salt
  • 1 30oz can crushed tomatoes
  • 1 15oz can light coconut milk
