  • 1 tablespoon Cajun seasoning**
  • About 2 teaspoons extra virgin olive oil, divided
  • 2 garlic cloves, minced
  • 1 cup raw cashews, soaked*
  • 4 green onions, white and green parts separated and finely chopped
  • Juice of 2 lemons
  • 8 ounces penne pasta
  • 1/2 cup filtered water
  • 1 roma tomato, finely chopped
  • 1/4 teaspoon salt
  • 8 ounces shiitake mushrooms, stemmed removed and sliced
  • Fresh parsley for serving
