Ingredients

  • 1 large onion, chopped
  • 1 small jalapeno pepper, seeded and minced
  • 1 (14.5-ounce) can petite diced tomatoes
  • 1 (14.5-ounce) can diced tomatoes with green chiles
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (29-ounce) can tomato puree
  • 3 cups chicken broth
  • 1 tablespoon minced garlic
  • 3 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon crushed red pepper
  • 1 1/2 - 2 pounds boneless, skinless chicken breasts
  • Salt and Pepper
  • Juice of 1 lime
  • Optional: Tortilla chips, fresh cilantro, chopped, sour cream, shredded Monterey Jack cheese, diced avocado
