This kohlrabi and carrot casserole is delicious. If you find yourself asking "what the heck is kohlrabi" we've got the answer. It's a root vegetable that tastes similarly to a turnip. This easy kohlrabi recipe is a great introduction to the vegetable, and makes a wonderful appetizer or side dish recipe. 

Cooking Tips

  • If you are unable to locate kohlrabi, celery root and turnips are appropriate substitutions for this recipe. 
  • White carrots may be used in place of orange carrots in this recipe.

Ingredients

  • ¾ C. breadcrumbs
  • 1 ½ C. skim milk
  • ½ tsp. salt
  • ½ tsp. pepper
  • 3 Tbs. butter, divided
  • 2 Tbs. flour
  • 4 med. carrots, sliced
  • 1/3 C. onion, chopped
  • 3 med. kohlrabi, peeled and sliced
  • ¼ C. parsley, chopped
  • 1 Tbs. lemon juice
