Ingredients

  • 3 tablespoons shallot, minced
  • 1 1/2 teaspoons extra virgin olive oil
  • 12 ounce jar roasted red peppers, drained and chopped
  • Roasted Red Pepper Sauce
  • Black pepper to taste
  • 1/2 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 1/2 teaspoon fresh thyme, chopped
  • 1/2 cup shredded parmesan cheese
  • 4 tilapia fillets
  • Parmesan Crusted Tilapia
  • 1 garlic clove, minced
  • 1/4-1/2 teaspoon kosher salt
  • 1/4 cup low sodium chicken or vegetable broth
  • 1 tablespoon red wine vinegar
