Queso Fresco Dumplings

These dumplings are classic comfort food with a twist. Adding a little queso fresco into the mix adds a little Latin flavor to this delicious main dish. Top with tomatoes and more for a fresh spin on a traditional meal.

Ingredients

  • 2 - 14.5 oz. cans diced tomatoes
  • 2 Tablespoons tomato paste
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 2 Tablespoons Italian seasoning
  • 4 cloves garlic, minced
  • 1 onion cut into ½ inch dice
  • 1 Tablespoon olive oil
  • Roasted Red Bell Pepper Sauce
  • ¼ tsp. ground white pepper
  • ½ tsp. freshly grated nutmeg
  • ½ tsp. salt
  • ½ cup grated Manchego Cheese
  • ¼ cup flour
  • 1 egg
  • 1 egg yolk
  • 1 package Queso Fresco
  • Gnudi
  • one 12 oz. jar roasted red bell peppers,drained and diced
  • 1 Tablespoon sugar
  • ¼ cup grated manchengo
