Ingredients

  • 2 large or 4 small russet potatoes, skin scrubbed clean
  • 1 1/2 cups low fat cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 of a yellow, red, or orange bell pepper, diced
  • 1 green onion, thinly sliced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 3 strips of bacon, cooked and diced
