Ingredients

  • 1/2 bunch of cilantro finely chopped
  • zest of 2 limes
  • 3-5 tablespoons olive oil
  • 2 heads cauliflower, rinsed
  • Lime And Cilantro Cauliflower Rice:
  • 1 1/2 cups water
  • dash of hot sauce
  • 1 tablespoon minced garlic
  • 1/2 cup apple cider vinegar
  • 1 1/2 cups bbq sauce (I used Bull?s Eye Brown Sugar Hickory Sauce)
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 chicken breasts (about 2 pounds), fat trimmed off
  • BBQ Shredded Chicken:
  • 1 large can sliced black olives, drained
  • 2 cans no salt added black beans, rinsed and drained
  • 2 pints grape tomatoes, washed and sliced
  • 5 small cucumbers, washed, peeled, julienned
  • 1/2 bunch cilantro, washed and roughly chopped
  • 3 heads romaine lettuce, washed and chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Pan Roasted Corn:
  • 2 bags frozen corn
  • 2 tablespoons olive oil
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon salt
